Assigning CPU to a VM Guest question

I have been asked to to do some testing on one of our VMGuest against a real box that is looking to replace.

In the past (and before I touched the config).  They had run some tests.

This is wha tI know of the systems that we are comparing and my question will follow:

Old Real box:

4x Dual Core Xerox Processors with 3GB RAM and Windows 2000 Adv. Server

VM Box

VMGuest setup:

2x vCPU 3GB RAM and Windows 2000 Server

My VMHost is a 2x Quad core Processor (so the Virtual Infrastructure Client)

Summary page for the VMHost

Shows 8 CPU and 16GB RAM  (There are about 10 VMGuests)

I am have been quickly monitoring the  Resources CPU are running about max at 20% and RAM is running at about 85% (I know it is high)

For the test we would like ot assign more processors to the VMGuest Test Machine, while shuting down a couple of other VMGuest that can be powered off for the testing time.

My questions would be:

Would there be any issues adding more processors to the VMGuest boxes? Other then shuting down the guest, editing the profile and rebooting the VM?

The Summary notes that I would have 8 Processor.  Can I assign (or is it a good practice to assign 4 or more cpus to a single vm)?

With the Windows Standard (does each vCPU = a core CPU or a licened CPU)

That is just in regards to how many CPU I could actually asign to a Windows Standard box (I know the CPU Max is 4) though wanting to know how the VMWare would present the CPUs to the Guest?

thanks for any insight to ths
